This knife is a beautifully balanced gyuto form, with a gentle distal taper through the blade, creating a finer tip for precise and nimble work.
The edge profile means it is suited to a push/pull/slide cutting action, but other than that, it is a general purpose kitchen knife and should be enjoyed as one :)
It's at a length that is comfortable for most and the balance point sitting well at the pinch point.
Due to the distal taper, it feels very nimble in the hand. At the pinch point, much like an extension of your own hand.

This is a light and nimble general purpose kitchen knife, ideally suited for those who prefer something smaller than a huge 10" chefs knife.
The santoku form is taken from that of the nakiri, which is almost a rectangle. The santoku obviously adds this very handy "tip", which here is quite thin, so is excellent for precise work and sliding through onions without trouble.
It has a very gentle curve to the edge profile, so is suited to the push/pull/slide cutting action.
Over recent years, I've come to absolutely love using a knife in this size and form and have something similar I've made in my own kitchen. It's very unintimidating to use (careful, it is still sharp!), I find myself picking it up very frequently, even over larger knives :)

A behind the scenes look at some of the processes I undertake when creating my work. Please bare with me, this is all self shot and in my very limited spare time. It's not always safe or practical to record everything... so I hope you enjoy what it is I can share with you!
My main focus with this series will be sharing the forging work I do. I will allow it to evolve but initially this will mostly be hot work on the anvil and perhaps I can take you along with adapting the fly press for forging, now that I finally have a stand made for it.
